Merry Christmas / So Exhausted

I hope everyone had a wonderful Christmas!

I'm sitting on my sofa, swollen feet propped up, with my laptop, my fuzzy blanket and a cup of hot tea in pure bliss. I have not one thing I NEED to do right now. Ah, what an amazing feeling that is!

Christmas Eve dinner was a huge success and I had SO much fun cooking with the help of my husband. Now that I'm in my third trimester of pregnancy, cooking and entertaining isn't as easy as it used to be! This is what we served...

Honey Roasted Pear Salad
(it was FANTASTIC! I might make the roasted pears alone as a light dessert some time. Here is the recipe)

Lamb Chops with Pinot Noir Sauce (another winner in my book. The sauce was to die for! Here is the recipe)

Wild Rice with Currants and Roasted Butternut Squash

Wild Mushroom Potato Gratin

Hericots Verts with Pine Nuts

Banana Upside-Down Cake (This is my favorite dessert that my Mother-in-law (a fantastic baker) makes - here is a recipe very similar, if not the same as hers. SO DELISH!)

{Hanukkah dinner at my In-laws house a few days ago. A fantastic meal of beef brisket and latkes was devoured...nom, nom, nom. This pregnant chick can't get enough latkes with apple sauce AND sour cream these days!}

And tomorrow we're off to the City to see New York City Ballet's The Nutcracker. Ever since I was old enough to remember, I've seen the Nutcracker ballet at Christmas time. It's magical.

We saw the Denver performance of the Nutcracker last year and it was magical. Can't imagine how amazing the NYC production must be!
